Pecorino Calabrese - Whole Wheel (3 lb)
This pure sheep's milk cheese, made in four-pound wheels, comes to us from Calabria, in southern Italy. Formed in woven molds, the rind takes on a ribbed pattern that makes a nice presentation. Excellent as a snacking cheese, Calabrese has that famous pecorino flavor, which is both sweet and salty. Like most ewe's milk varieties, its surface is a bit oily due to the natural oils in the milk. Imported from Italy, this is a perfect pecorino, with a salty and sweet taste, and it pairs well with bold red wines like Brunello. Ships expedited in an insulated package to ensure freshness. Serve it grated or sliced, as it is made from pure sheep's milk.
